Ingredients
- 1 kg beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 2 onions, chopped
- 4 carrots, chopped
- 3 celery stalks, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups beef broth
- 1 cup red wine (optional)
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 2 bay leaves
- 1 kg potatoes, peeled and cubed
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Season the beef cubes with salt and pepper. Brown the beef in batches and set aside.
- In the same pot, add the onions, carrots, and celery. Cook until softened, about 5-7 minutes.
- Add the garlic and cook for another minute until fragrant.
- Sprinkle the flour over the vegetables and stir to combine. Cook for 1 minute.
- Gradually stir in the beef broth and red wine (if using), scraping up any browned bits from the bottom of the pot.
- Stir in the tomato paste, thyme, and bay leaves.
- Return the beef to the pot. Bring to a simmer, then reduce the heat to low, cover, and cook for 1.5 to 2 hours, or until the beef is tender.
- Add the potatoes and cook for another 30-40 minutes, or until the potatoes are tender.
- Remove the bay leaves before serving. Season with more salt and pepper if needed.
